Black Bean Mango Salsa

This festive summer dish incorporates black beans–making this not only tasty, but adds lots of protein and fiber to your diet. Black bean mango salsa is a versatile dish. Try it topped over your grilled chicken breasts at your next cookout, or baked with pork chops. Traditionalists will enjoy this beautiful salsa with tortilla chips. This would be a great addition to any picnic or family get-together!

INGREDIENTS:
- 1 can of reduced sodium black beans, drained and rinsed
- 1 mango, peeled and diced
- 1/2 cup cilantro, roughly chopped
- 1/4 cup red or sweet onion, diced
- 1 small yellow bell pepper, chopped
- 1 small red bell pepper, chopped
- Juice of 1/2 a lime
PREPARATION:
- Mix all ingredients in a large bowl until combined.
- Serve with tortilla chips or with chicken, fish, or pork.
