Chocolate Chip Zucchini Bread

Time 1 Hour 30 Minutes • Makes 16 Servings


This sweet quick bread is kept moist with applesauce and just the right touch of sweetness with chocolate chips.

  • 3/4 C sugar
  • 3 T canola oil
  • 4 large egg whites
  • 1 C applesauce
  • 2 C all-purpose flour
  • 3 T unsweetened cocoa
  • 1 1/4 t baking soda
  • 1 1/2 C finely-shredded zucchini (about 1 medium)
  • 1/2 C semi-sweet chocolate chips



  1. Preheat oven to 350º. Place first 3 ingredients in a large bowl; beat with a mixer at low speed until well blended. Stir in applesauce.
  2. Lightly spoon flour into dry measuring cups; level with a knife. Whisk in flour and the next 2 ingredients; mixing well. Add flour mixture to sugar mixture stirring just until moist. Stir in zucchini and chocolate chips. Spoon batter into a 9-inch loaf pan coated with cooking spray.
  3. Bake for 1 hour or until a toothpick inserted into the center comes out almost clean. Cool in pan for 10 minutes on a wire rack, and remove from pan. Cool completely on wire rack.
